  1. You need of Filling.
  2. Prepare 2 1/2 cup of Dates (pitted and chopped).
  3. You need 1 cup of Water.
  4. You need 2 tbsp of Lemon Juice.
  5. You need 1 tbsp of Brown Sugar.
  6. Prepare 1/2 tsp of Baking Soda.
  7. It's of Crisp.
  8. You need 1 3/4 cup of Rolled Oats.
  9. Prepare 1 cup of All Purpose Flour (I used Unbleached).
  10. You need 1/2 cup of Brown Sugar.
  11. It's 1/4 tsp of Baking Powder.
  12. It's 3/4 cup of Butter (Room Temp).

The squares turned out be very good, very much like the recipe my mother used to make when I was a child. The only thing I would change is perhaps to omit or put less of the lemon peel. I don't know if it's because my lemon was too big, but the date paste was a bit too lemony for my taste. Gently spread date filling over bottom crust.

Date Squares! step by step

  1. Preheat oven to 350℉ and grease a square 8x8 baking pan and line the bottom with parchment paper (this makes sure the squares won't stick to the bottom on the pan).
  2. For the filling, in a saucepan bring the dates, water, lemon juice and brown sugar to a boil, add baking soda and let it simmer for 5 minutes (you should have a thickened date mixture and all the dates will have broken apart) take off heat and let it cool while preparing the crisp.
  3. In a large bowl combine together all ingredients except butter and mix these together well.
  4. Cut in the butter and mix together until you have a crumbled mixture.
  5. Firmly pack half of this mixture to the bottom of your pan.
  6. Next layer on all the cooled date filling.
  7. And sprinkle the remaining crisp on top and once all evenly coated, very gently press down to pack it a bit.
  8. Bake for about 20 minutes or until the top looks golden brown.
  9. Let it sit and cool for several hours before cutting the bars or they may fall apart if you cut them too soon!.
  10. Enjoy!.
